Think date squares but with rhubarb ….you need 6 cups of rhubarb but if you don’t have enough fill in with some other fruit. My family’s favorite!

Rhubarb squares
Filling:
6 cups of washed , cubed rhubarb
1/4 cup water
1 cups white sugar
1/3 cup sifted cornstarch
Optional 1-2 tbsp grated lemon zest
Crust:
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups rolled oats
1 cup packed brown sugar
3/4 cup, melted unsalted butter

350 degrees F…30-40 minutes. Top brown, filling bubbling. Freezes well.
