This is the Italian recipe of Chicken in Beer or “Pollo alla Birra”. When I was living in Firenze, I met a lovely gallery owner where I did my 2nd solo exhibition. She later on became my good friend and one day she drove me from Florence CBD to its nearby municipality Bagno a Ripoli, Vallino – where mu Italian friend lives. The view is indescribale and the food she cooked where amazing! She did some Sicilian dishes like Pasta alla Norma with Ricotta Salata, Zucca con Rosemarino and of course the Pollo alla Birra. The day she welcomed me at her house with the hillview of Tuscany and giving me a liter of her first press Olive Oil, is something I will never forget.
I recreated the dish she cooked for me, and I hope I gave justice. I didn’t use an Italian beer but I was glad to find a gluten-free beer called Prost Beer. I dedicate this episode to Daniela, she is an angel friend who will be forever be in my heart 🙂
