Today, I am going to you how to make one of my own recipes. That’s why it is called penne alla Vanessa. The inspiration came to me one day, while I was eating in one of the amazing restaurants along the Conero Riviera. The chef had used curry to enhance one of his fish dishes and I thought that it was a very cool idea. So now, I use curry in many of my pasta or even fish dishes. I also like to add some cream to soften the flavour of the dish and – as you will see – some other ingredients too… enjoy it!

INGREDIENTS
2 medium or 1 large courgette (zucchini)
250gr of fresh or frozen prawns
200gr of cherry tomatoes
500gr of penne
2 cloves of garlic
150ml of fresh cream
3 to 4 table spoons of curry powder
Olive oil
Salt
Fresh parsley or cilantro
PREPARATION
Warm up the olive oil in a large pan. Add the crushed garlic. When it’s lightly fried, add a few tea spoons of curry powder. Add the chopped courgettes (zucchini) and a glass of water or white wine. Cover and let them cook until they are soft. Add the diced cherry tomatoes and let them cook for five minutes. At this point, if you have frozen prawns you will have to either defrost them or cook them first. Add the chopped fresh or previously defrosted prawns. Cook for a few more minutes then add the cream. Cover and turn the heat off. Meanwhile, fill a deep pan with water and bring it to the boil. When the water is boiling put the penne in it. Cook it “al dente”. When the pasta is cooked, drain it and put it in the pan with the sauce. Mix pasta and sauce together. It’s now time to plate it.
Serve hot and with either parsley or cilantro over it.
