What a fun and cool dish to make with the kids! This takes boring spaghetti to a new level!
Ingredients:
12 oz. spaghetti noodles
1 1/2 c. shredded mozzarella
3 large eggs, divided
3/4 c. Parmesan, divided, plus more for garnish
3 c. marinara, divided
1 lb. ground beef
1/2 c. Italian bread crumbs
2 cloves garlic, minced
2 Tbs. chopped parsley, dried or fresh
1 Tbs. olive oil
Directions:
Preheat oven to 400 degrees.
Cook spaghetti until al dente, 8 minutes. Drain and rinse with cold water.
In large bowl, toss spaghetti, 2 beaten eggs, shredded mozzarella, 1/2 c. grated Parmesan and 1 c. marinara.
Spray muffin pan with cooking spray and nest spaghetti inside. Using the bottom of a shot glass, firmly press down to create a well in each nest.
Bake until set, 15-20 minutes. Cool. If nests puff up after baking, press down again with shot glass.
In a large bowl, combine ground beef, bread crumbs, garlic, 1 egg, remaining 1/4 c. Parmesan and parsley.
In a large skillet over medium heat, heat olive oil. Brown meatballs and drain fat. Pour remaining 2 c. marinara and let simmer for 5 minutes.
Spoon one meatball and sauce into spaghetti nest and garnish with Parmesan and parsley.
