Simple Bolognese Pasta Sauce
Ingredients
• 1 onion, finely chopped
• 4 cloves garlic, crushed
• 500 g lean beef mince
• 1/2 Cup Red Wine
• 3 x 400g Tinned Tomatoes
• 1.2 L Water
• 250 g tomato paste
• 3 Bay Leaves
• 2 ml dried fennel/or to taste
• 1 tsp Italian Seasoning
• 1 Small bunch of Parsley Fresh
• Salt and pepper, to taste
• 1 Tbsp Brown Sugar
Directions
1. Heat olive oil in a heavy based pot on a medium to high heat
2. Add onions and fry until translucent
3. Add garlic be careful not to burn.
4. Turn up to high heat and If you are adding any additional veggies do this at this step and fry veggies until liquid disipates.
5.Then add tomato paste and fry for a few minutes to intensify the flavour.
6. Once tempurature gets back to high again now add Beef mince and brown the mince and break up into small pieces.
7. Once the meat has been browned ass your wine and cook until all the alchol evaporated.
8. Add 3 x cans of tomatoes and add refill te tomoato cans with water and add also.
9. Add Bay leaves, Fennel, Italian Seasoning and Parsley.
10. Bring to the boil with the lid off and stir thouroughly.
11. Now place on a low heat with the lid on and simmer for at least 30m stirring occasionally.
12. Take the lid off and taste the sauce and now season with Salt & Pepper and add brown sugar if required to balance the acidity of the Tomatoes if required.
13. If you want a deaper more intense flavour put the lid back on and cook for another 90 minutes.
14. To thicken up the sauce remove the lid and simmer until you achieve desired thickness.
Serve with your favourite pasta or even use as a base for Lasagna.
