Ingredients:
◾ 4-5 med size beef shanks
◾Salt,
◾ freshly ground black pepper
◾ Olive oil
◾ 4-6 Garlic, minced
◾ 2 large white onions, minced
◾ 1 cup celery stalks, diced
◾ 1 cup carrots, diced
◾1/2 kilo local tomatos, seeds removed, diced
◾ 1/8 c tomato paste, you may add 1T more when sauce has reduced, taste test
◾ 1 cup your fave white wine ( i just used red this time i ran out of white)
◾ 1/8 c brown sugar
◾ 1 t salt
◾ 1 t cumin powder
◾ 1/2 T Italian seasoning ( optional)
◾ Fresh italian parsley
◾ Fresh basil leaves
◾ 1 beef cube (optional)
◾ 4 cups water
Tips:
◾ After the 1 hour mark (of boiling), check every 15 min. Do not overcook the meat or else it will fall off from the bone.
◾ You may use diced tomatos in can, reduce the water to be added.
