Today, Corinna and Violante will show you how to make a carrot cake. Carrot cake was invented in the Middle Ages when honey and sugar were scarce and expensive. Carrots, being the sweetest of all the vegetables, were therefore often used to make cakes. Enjoy it!
INGREDIENTS
3 eggs
375gr of peeled carrots
195gr of sugar
195gr of flour
50gr of corn starch
120ml of seed oil
15gr of baking powder
Lemon zest
Salt
PREPARATION
Blend the carrots. Beat the eggs with the sugar. Add the lemon zest. Then start to gradually add the blended carrots. Add the seed oil, the corn starch and the baking powder. At this point, start adding the flour. Add a pinch of salt and if you want, a few drops of rum.
Prepare a baking tray by covering the bottom with parchment paper and brushing the edges with butter. Pour the cake mix in it. Bake in the oven for 45 minutes at 175C (350F).
Garnish with powder sugar, chocolate, nuts or even whipped cream.
