Chicken Saltimbocca/ saltimbocca alla Romana is an Italian dish made of veal lined or wrapped with prosciutto and sage. An American twist replaces the veal with chicken or pork. Real meaning of saltimbocca is “jump in the mouth”, and that’s precisely what this tasty combination of veal, prosciutto, sage and white wine will do.

I have given a twist here by using Middle Bacon Rind as I couldn’t get prosciutto this time. I haven’t rolled it up instead I left it flat so it takes less time for Chicken to cook. If you really want to do authentic Italian recipe please use Veal and Prosciutto for keeping up the authenticity.

INGREDIENTS:

Chicken Thighs – 2 Nos (boneless)
Sage leaves -2 Nos ( Use more if needed )
A few sprigs of parsley (chopped)
Garlic clove – 1 Finely chopped
Middle Bacon Rind – 2 Slice
White wine – 1/2 cup
Marsala – 1/2 cup
Butter – 45 grms
Olive oil – 2 tblspn
Plain flour – 5 tblspn
Cracked pepper – As per taste
Salt – As per taste
Toothpicks – 2 Nos

Note:
** Use Veal for authentic Italian recipe.
** Substitute with Chicken / Pork if you are unable to get Veal. I have used Middle Bacon Rind instead of Prosciutto.
** Avoid Marsala if you dont like the taste and add 1/2 cup of chicken stock instead.
** Works really well served with gnocchi and mushrooms.
** I have used beans and baby tomato for a change.
