1 stick of celery
2 diced carrots
2 diced shallots
4tbls olive oil
1 sprig Rosemary
400g minced beef
100g minced pork
1kg chopped tomatoes
2tbls tomato paste
1 bay leaf
50ml milk
200g beef stock
1kg 00 flour
16 egg yolks
4 whole eggs
5tbs olive oil
Chilli skins
Add to the ragu (depending on how much is leftover)
To taste:
Cumin powder
Chilli
Red bell pepper, diced
Potato skins
Butter
Parmesan or Cheddar
