APULIAN FLATBREAD (focaccia pugliese)

It’s a kind of bread seasoned with cherry tomatoes, oregano and olive oil, a comfort food, the dough contains mashed potatoes that create a focaccia with a very soft interior and a crisp crust, it’s thicker than the other kinds of focaccia, it could be compared to a delicious “mattress” 😋

Ingredients list: for a tray approximately 11×13 inches (30×35 cm)
(I use the oven backing tray with parchment paper to prevent from sticking)

400g (3 1/4 cups) all purpose flour
350g (2 3/4 cups) durum wheat semolina flour
200g (7oz) potato
400ml lukewarm water
1 tsp honey
15g (5tsp) fresh brewer’s yeast or 1, 1/2 tsp dried brewer’s yeast
15g (2 1/2 tsp) fine salt.
75ml extra virgin olive oil.

For the topping:
400g (14oz) Cherries tomatoes
Oregano
Salt
Olive oil
