Here’s an easy way to clean fresh artichokes. This is an essential step whether you wish to saute’, roast or stew fresh artichokes!
This video covers what to do with the stem (it is edible) and what to do with the “discarded” parts.
Once you’ve done this a couple of times you’ll do it without thinking – just put some music on and grab your knives.
The steps are
1. cut stem
2. remove leaves
3. trim stem
4. cut top
** If stuffing the artichoke, don’t cut any further! You’ll have to separate the leaves and with a small spoon remove the hairs in the choke. if not stuffing, proceed with step 5. I’ll make a video covering this soon. **
5. cut artichoke in half
6. remove hairs from choke with paring knife
7. slice the artichoke according to your recipe
8. put the cut pieces of artichoke in a big bowl of water with some white wine vinegar.
