I decided to recreate Jamie Oliver’s Italian burger which I’ve made a couple of times before and every time it turns out pukka. The patties are dry aged chuck burgers which I cooked with the pancetta, this and the balsamic is about the only Italian thing about this recipe! I also made some brioche buns from scratch and they turned out to be heavenly fluff balls of sweet bready dreams. I slow cooked balsamic onions with thyme and bay leaves for about 30 – 40 minutes until gooey and sweet, this was finished with a simple home made burger sauce which lightens everything up.

Brioche Recipe:

475g Plain Flour
30g Coconut Powder (or Milk Powder)
21g Fresh Yeast / 12g Dry Yeast
2 Tsp Salt
215g Lukewarm Water
1 Egg
40g Soft Butter

(Note: Dough should be sticky but not wet, adjust the flour/water for desired consistency)
