Poppy Seed and Orange Biscotti

Ingredients:

4 egg whites
1 tsp of lemon juice
1/4 tsp of salt
1/2 cup (110gm) of caster sugar
1/2 cup (60gm) of poppy seeds
Zest of 1 orange
1/2 cup (75gm) of plain flour

Cranberry Biscotti

Ingredients:

4 egg yolks
1/4 tsp of salt
1/2 cup (110gm) of caster sugar
1/3 cup (87ml) of milk
1 tsp of baking soda
1 cup (125gm) of dried cranberries
2 1/4 cup (337gm) of plain flour

Almond Biscotti

Ingredients:

2 eggs
1/4 tsp of salt
1/2 cup (110gm) of caster sugar
2 tbsp of butter (room temp)
1 tsp of baking soda
2 cups (300gm) of plain flour
1 cup (120gm) of slivered or chopped almonds

Oven temperature – 180C (355F), 150C (300F)
Baking time – 30min, 35-40 min, 40 min
