How to make Italian chicken in Marsala wine using only one pot or one large casserole/frying pan with high sides for the whole family! Method shown is for one cut-up, bone-in, skin-on chicken for four people. First, brown chicken inolive oil, skin down and turn. Remove from pan and add chopped onions, garlic, and pancetta. Soften and then add Marsala wine. Boil off half of the wine and then add chopped tomatoes and mushrooms. Put chicken back into the pot and cook until done!
