Recipe
Ingredients
**For The Bacon Jam**
**This can be made ahead of time**
1 lb bacon, sliced 1/2”
1 lb yellow onion, sliced 1/4” thick
1 tbsp Your Favorite Seasoning
1 tbsp minced garlic
1/2 cup brown sugar
1/2 cup coffee
1/2 cup cider vinegar
1/2 cup maple syrup
1/4 tsp dried thyme
For the secret sauce:
10 tbsp mayonnaise
6 tbsp Chipotle Ketchup
**For The Meatloaf**
1 lb ground beef 90% lean
1 lb ground pork
1 8oz can mushrooms (reserve juice)
1 cup breadcrumbs
2 large eggs slightly beaten
1 tsp garlic powder
2 tbl Worcestershire sauce
1 tsp salt
8 center cut bacon strips
2 tsp dried parsley
1 tsp oregano
1 tsp basil
1 tsp thyme
4 tbl breadcrumbs
1 onion finely diced
2 cups mozzarella cheese
Directions
**For the Bacon Jam**
To make the bacon jam, cook the bacon over medium heat in a Lodge 12” Cast Iron Skillet, stirring frequently until lightly browned. Remove from the skillet using a slotted spoon. Drain bacon on paper towels. Add the sliced onions and Cattleman’s Grill 8 Second Ride Carne Asada Seasoning to the skillet. Cook until translucent, about 5-10 minutes. Add the garlic and brown sugar. Cook for one minute. Add the remaining ingredients. Bring to a simmer. Return the cooked bacon to the skillet. Cook over low heat until the mixture is syrupy. Transfer to a food processor and pulse to desired consistency. Cool and store in mason jars in the refrigerator.
**For The Meatloaf**
Preheat oven 375°
Add water to mushroom juice to make 1 cup
Fry bacon till crispy drain and crumble, set aside
Combine meats, 1 cup breadcrumbs, beaten eggs, mushroom juice, garlic powder and salt in large bowl, mix well.
On wax paper, form meat mixture into 8X12 1” rectangle
Sprinkle meat with parsley, oregano, basil, thyme and 4 tablespoons breadcrumbs
Spread bacon, onion, mushrooms, cheese evenly over meat mixture
Roll meat into a 8” wide loaf. Place loaf into loaf pan
Bake for 60 minutes
Pour tomato gravy over meatloaf, cook additional 15 minutes
Remove from oven, let sit for 15 minutes for loaf to set
Slice and serve with mash potatoes
**Cooking Options**
**For Oven**
Bake in oven at 375° for 45 minutes or until internal temperature reaches a 165 degrees.
**For Grill**
Use a cast iron skillet and wire rack
Smoke or grill for 1 hour 30 minutes or until internal temperature reaches 165degrees
Remove to cutting board and allow to cool for 10 minutes
Serve on potato bread! Or with potatoes and a green vegetable.
