Costelão (long-roasted beef ribs) is a typical dish of men and women from the Pampa region, in southern Brazil as well as in Argentina. For those in the field, working with cattle, it was a simple way to make food. It was enough to “shoot down an animal” and roast its ribs with wooden skewers with ground fire. It is currently a delicacy served at parties and restaurants.
The descendants of Italians, always diligent about eating well, have easily absorbed this culinary culture. But, of course, they gave it a touch, enhancing the spice, leaving the meat marinating in salt, green spices, garlic and white wine.
This is the case of Costelão from the video, which was served at an event in the Italian colonization region of the state of Rio Grande do Sul, Brazil. Demonstrated that for Italo-Brazilians, it’s okay to absorb different culinary habits. The important thing is to eat well.
