In this video you will learn to make a crawfish carbonara with Fresno chili.
Traditionally carbonara is an Italian dish from Rome. Originally all you need is guanciale (cured pork jowl), egg, pecorino Romano, spaghetti, and black pepper. And this is a fantastic dish on its own, but I love to do things my own way.
I use smoked bacon instead of the traditional cured pork. I also add garlic……..which by all means is not supposed to be there, but I enjoy what it brings to the dish. Then there is the Fresno chili. I add this chili for flavor not necessarily for an aggressive burn. Whenever you use chili, it needs to build the dish and add another layer to the profile, not ruin the experience.
Notes when making this dish:
* I used crawfish – shrimp will work as well
* Black pepper is very important in this dish, but be careful with the salt. You will be adding seasoned pasta water, smoked or cured pork, and cheese. Taste before adding any salt.
* Be sure your pasta is not too hot when adding the egg and cheese mixture.
