Potato Salad:
– 3 lbs of baby red and white petite potatoes
– 4 stalks of celery
– 1/2 red onion
– 2 large pickles

Dressing for Potato Salad:
– 1 Cup of cashews
– 2 Cups of water (make sure to toss this water out and use fresh water for blending the cashews)
– 3/4 cup water (for blending the cashews)
– 2 TB lemon juice
– 2 TB apple cider vinegar
– 2 tsp garlic powder
– 1 tsp onion powder
– 2 tsp of seasoning salt
– 1 tsp garlic black pepper
– 2 TB Dijon mustard
– 1/4 cup chopped dill weed
– 1/2 cup of pickle juice
(salt to taste)

Pasta Salad:
– 12oz of tri-color pasta
– 1 red bell pepper
– 1 green bell pepper
– 1 cucumber
– 2 cups sliced olives (3 small cans)
– 1 can of artichoke hearts
– 1/2 cup of sun-dried tomatoes
– 1/2 red onion (not shown in the video)

Dressing for Pasta Salad:
– 1 zesty Italian salad dressing packet
– 3 TB water
– 1/4 cup white vinegar
– 2 TB olive oil
– 1/2 cup of red wine vinegar
– 1 TB seasoning salt
– 1 TB garlic pepper
– 2 tsp garlic powder
(salt to taste)
