This is a specialty from Northen Italy, typical of Milan. The secret for a good risotto is turning gently and continuously the rice adding the broth little by little. This specialty is often accompanied by “Ossobuco” (braised veal shank), you can find my recipe on this channel!

Ingredients for 3/4 people:

1 pound of rice (if you want to make more, you can cook the “riso al salto” the day after!)
one onion
3 ounces of butter
a spoonful of olive oil
1 glass of white wine
a bottle of broth
2 saffron sachets
a cup of diced cheese (my father uses Fontina, Provolone is also good)
4 spoonfuls of Parmesan cheese
