Today, Corinna is going to show you how to make la parmigiana di melanzane. Parmigiana is a dish that has its origins in Sicily where aubergines are often used as the main ingredient of many delicious dishes. there are many versions of parmigiana. We are going to show you a simpler one: the aubergines are grilled, not fried and we use a good quality passata instead of the homemade pomodoro sauce. In the video, Corinna will show you the version with ham which can also be replaced by mortadella. However, you can remove this ingredient altogether and go for the more traditional vegetarian version. Enjoy it!
INGREDIENTS (6 to 8 people)
3 medium sized aubergines
100 g of ham or mortadella (don’t use this ingredient for the vegetarian version)
400gr of good quality passata (strained tomatoes)
2 eggs
2 hard boiled eggs
2 sliced mozzarella
50gr of Parmesan Cheese
Olive oil
Salt
Basil leaves
PREPARATION
Slice the aubergines and cover them with coarse salt for 30 minutes. This will help remove the bitter taste. Then remove the salt and dry them up. Grill the aubergines and set them aside.
Crack the eggs and beat them with some salt. Slice the hard boiled eggs.
Now you can start preparing the parmigiana. Start with laying a thin layer of passata. Then add the layer of aubergines. Add another layer of passata. Add a few slices of mozzarella. At this point, you can add the slices of either ham or mortadella – if you want the vegetarian version, skip this step. Add a dee table spoons of egg mix. Add a few slices of hard boiled eggs and a few tables spoons of Parmesan. You can now add some chopped basil leaves (optional, a few pinches of salt and sprinkle some olive oil over it. Now, you are ready to start all over again! You can make as many layers as you like.
Cook in the oven at 200C (400F) for 40 minutes.
Serve hot.
