Eggplant tomato and cheese tajine is inspired by Italian-American flavors cooked in a traditional North African cooking pot, a tajine or tagine. A vegetarian cuisine that will satisfy even non vegetarians. A healthy portion of cheese adds richness.

Fusion cooking and exploration of flavors are what inspires me in the kitchen. Melted cheese with fresh bread is always a good idea.
