In its 77 years of existence, Vidyarthi Bhavan has always served its iconic masala dose within its premises, keeping it strictly outside the purview of delivery services. However the current scenario calls for an entirely new approach in food service, and in keeping with this, this revered South Bengaluru eatery has embraced takeaway as a new way of life, at least for the foreseeable future. I visit Vidyarthi Bhavan to document this change from the past and see for myself how its management is taking all steps necessary to ensure continuity of its delicious culinary traditions in as safe a manner as possible. Takeaway Dish Review
Masala Dosa
The masala dose is now folded twice as opposed to the VB classic one fold, an allowance that the eatery has made for the dose to be rolled into an aluminium foil in order to retain its temperature when savoured at home. The crispy crackle of the dose is now replaced by a whisper of a crunch, but the buttery flavours are still spot on. The dose oozes ghee, and the aloogadde palya is mildly seasoned and creamy. It helps to crispen the dose a bit on the pan just before eating.

Idli
VB’s idlis are the grainy sort, perfect for ladling over chutney and piping hot sambar, before breaking it down to a delicious, spicy mash. If they’re too cold by the time they get to you, steam for a couple of minutes.

Uddin Vade
The vade definitely suffers the most casualty when consumed in a takeaway format. Gone is its crisp crunch, that would yield to a porous bite. The only way to redeem the vada is to dunk it into a bowl of piping hot sambar and savour it with a dollop of spicy chutney.

Khara Bath
The kharabath travels extremely well, given its moist texture. This tasty dish is studded with onions, fried lentils, coconut flakes and curry leaves, making for a playful medley of flavours and textures.

Kesari Bath
End your meal with this luscious semolina preparation, the flavour of the pineapple and cloves is quite pronounced. The dish is mellow in its sweetness, save for the pop of extra sweetness when you bite into a toasted raisin.
