Fish Stock Recipe:
shrimp and Lobster Shells
fish trimmings
1 Large onion
6 large garlic cloves
2 parsley stems
1 bay leaf
2 tsps pepper corns
Cioppino Recipe:
2 lbs snow crab legs
1 1/2 lbs Large shrimp
1 lb Mussles
2 small lobster tails
1 1/2 lbs Scallops
1 lb fish (I used snapper)
2 Cups fish stock (use more if needed)
1 Bay leaf
3 large Garlic Cloves
1 large Shallots or Onion
2 large Cans Whole peel tomatoes
2 Tbsps Tomato paste
2 tsps white or black pepper
2 Tbsps Italian seasoning
1 Tbsp dry red pepper flakes (optional)
2 Tbsp Fish seasoning
Salt to taste
1 Cup dry white wine
2 Tbsps Fresh parsley (reserve 1 Tbsp for garnishing)
