Most everyone has a childhood memory of some kind of meatball. A comfort food that represents a time, place and a taste that only mom or grandma could make. In our kitchen today we will show you how to make a traditional Italian American Meatball simmered in a lite marinara with ground beef, ground pork, eggs, bread, bread crumbs, milk, garlic, Romano cheese, basil and parsley.

Meatball Recipe
12 ounces ground beef chuck with 20% fat
4 ounces ground pork or veal
1 large eggs
1/4 cup bread crumbs
1.5 tablespoons chopped flat-leaf parsley
1 tablespoons chopped fresh basil
1/2 tablespoons salt
1/2 teaspoons finely chopped garlic
1/4 teaspoon black pepper
2 slices white bread crusts removed
1/2 cup milk
1/2 cup Romano cheese

Method:

1. In a large mixing bowl, with your hands mix together the beef, veal, and eggs. Add the bread crumbs, parsley, basil, salt garlic, and pepper and mix it well.
2. Tear or cut the bread into pieces ad transfer into a mixing bowl. Add the milk and let it sit for 5 to 7 minutes or until the milkis absorbed. Add the bread to the meat and use your hands to mixit well. Stir in the grated cheese.
3. Cover the bowl with plastic wrap and refrigerate it for 45 minutes to 1 hour or until the meat is firm.
4. Using an ice cream scoop, remove chunks of meat and roll them between your palms into meatballs. Refrigerate the meatballs for about ten minutes.
