Mamma Mimi’s Italian Cooking Tutorial: Episode Four: Soffritto Base – An Essential Italian Ingredient!

Soffritto is the name given to the traditional ‘base’ flavour of many of your favourite Italian dishes like ragu, crostini neri, minestrone, pomarola and more. This video shows you what ingredients you’ll need and how to prepare it so that it infuses your cooking with a delicious, authentic taste.

Ingredients:
– 1 Onion (equiv. small shallot)
– 4 Garlic Cloves
– 1 handful of Parsley
– 1 handful of Basil
– 1 handful of Celery (mostly leaves)
– 1 Carrot

Instructions:
Chop Soffritto very, very finely, until it resembles breadcrumbs.
Gently fry until you notice a change of colour.
Use as a base for whatever recipe you are following.
