The beef fillet, boiled in the broth, becomes extremely soft and tender. This recipe is very easy and very useful: it gives you ready broth for your “risotti” and “ravioli”!

1 beef fillet
1 onion
2 carrots
1 beef marrow or beef bone
1 spoonful of coarse salt
2 laurel leaves
