Today, Corinna is going to show you how to make mozzarella in carrozza – a yummy and delicious traditional Italian recipe. Mozzarella in carrozza, which literally means “mozzarella in a carriage”, goes back centuries. Its origins lie in the Campania region, around the Naples area. According to some stories, this dish takes its name after the means of transportation of milk which is used to make mozzarella. Back then, milk used to be transported by carriages pulled by horses. The journey was so long that, by the time the milk had made it to destination, it had become mozzarella! Its name may also come from the fact that traditionally, mozzarella in carrozza was a dish of the poor who often, were forced to be creative in their way of cooking. When ingredients were about to go off, they used to assemble them together and fry them. In any case, it’s a wonderful dish – easy to make and delicious to the palate. Enjoy it!
INGREDIENTS (for 10 servings)
20 slices of fresh bread
2 mozzarellas (10 slices)
100gr of ham (10 slices)
2 eggs
150gr of flour
150gr of bread crumbs
Anchovy fillets (optional)
Frying Oil
Salt
PREPARATION
Take two slices of bread and place a slice of ham and a slice of mozzarella in between. You can also add one or two anchovy fillets if you like them. This is your sandwich.
In a large bowl, beat two eggs with a few pinches of salt.
Cover each sandwich with flour, then dip them in the egg mix and lastly, cover them with bread crumbs.
In the meantime, fill a large frying pan with frying oil (sunflower oil, peanut oil or corn oil, etc). Dip the sandwiches in the hot oil and let them fry until they are golden in colour. Keep turning them around to avoid overcooking one side. When the sandwiches are cooked, drain them and add some salt over them (as needed).
Better served hot.
