This delicious Matcha Strawberry Cake is something you should try if you’re a matcha lover. I am, and you probably have noticed it checking out my other matcha desserts here on my channel.
This one instead is a naked cake with a soft Italian sponge cake with matcha (but no baking powder at all), smooth cream and mascarpone filling, and fresh strawberries.
You’ll love it!
Ingredients:
Matcha Sponge Cake
flour 90g.
sugar 90g.
3 medium-large eggs
a pinch of salt
matcha powder 5g.
vanilla extract 1 teaspoon (optional)
Filling:
mascarpone cheese 250g.
heavy cream 250g.
powdered sugar 3 tablespoons
fresh strawberries 400g. (200g chopped and 200g. cut in two halves)
Tin used: 15 cm diameter
Instructions:
1. In a stand mixer or a large bowl, mix the eggs with sugar, salt, and vanilla extract until foamy (see video).
2. Once ready, start adding the sifted flour and matcha powder (a bit at a time), whisking gently with large movements.
3. Pour the mixture in a cake tray and bake at 175°C for 25-30 minutes. (use a toothpick to check when the cake is ready).
4. Leave the cake to cool down completely and start preparing the cream.
5. Mix the heavy cream with mascarpone and icing sugar.
6. Then cut into small pieces half of the strawberries quantity. The rest of it, cut in two halves.
7. Cut the cake and decorate with the cream, then add the chopped strawberries. Add some other cream and cover with the other part of the cake.
8. Add the rest of the cream on the top and the strawberry halves.
9. Put the cake in the fridge for at least 4 hours.
10. Once ready add some matcha powder on top.
