Today, I am going to show you how to make meringues. Meringue is part of the Italian and French culinary traditions. Although, meringues are made by using only three ingredients, they can be quite tricky to make. Follow my footsteps and I can ensure you that your meringues will be the best ones in town! Enjoy them! 🙂

INGREDIENTS (for 12 meringues)

For the meringues
3 eggs
80gr of sugar
30gr of corn starch
1 table spoon of white vinegar

For the filling
200ml of whipping cream
Fresh strawberries
Chopped dark chocolate

PREPARATION

Separate the egg whites from the yolks making sure there are no traces of yolk in the white. Use a stand mixer, a hand mixer or even whisk and whip the egg whites until they are stiff. When you see that they start to be firm, gradually add the sugar, corn starch and a table spoon of vinegar. Turn the bowl upside down, if the foam doesn’t fall off, it’s good to go!
Lay a sheet of parchment paper on an oven tray. Put the meringue mix inside a decorating bag and squeeze it to create the meringues. Put in the oven at 120C (250F) for one and a half hour. Open the oven, tap gently on the surface of the meringues. If it’s hard then they are ready.
In the meantime, whip the cream for the filling and fill a decorating bag with it.
Take one meringue and squeeze a layer of whipped cream on the flat side. Take a second meringue place it on top (back to back) to create a sandwich. Keep going until all meringues are ready. Decorate them and keep them in the fridge before serving.
