Hey guys! Welcome back to Living Gratefully and Cooking w/ Cathy! We made Tomato Tortellini Soup during quarantine and it’s a 5 star recipe in our house (aka “card worthy”)! This video is not highly edited so you will see all the steps to make the soup, I did speed it up a little so you wouldn’t get bored though! 😂 lol

❣️ TOMATO TORTELLINI SOUP ❣️
2 large cloves of garlic minced
2 tablespoons olive oil
2 cans condensed tomato soup
Can diced tomatoes -optional
2 tablespoons tomato paste
2 cups half-and-half
2 cups chicken broth or stock
1 teaspoon onion powder
1 tablespoon Italian seasoning
1/2 tablespoon of salt
1/2 teaspoon of pepper
9 ounce package of cheese filled tortellini
Shredded Parmesan cheese for garnish -optional
Sauté garlic with olive oil in stock pot over medium heat until golden brown When the garlic is done add tomato soup, tomatoes, tomato paste, half-and-half, chicken stock and spices. Bring to a simmer. Once simmering drop tortellini into the soup cook according to package directions. After tortellini are cooked, ladle soup into bowls and top with Parmesan cheese – optional
