We are using red wine to cook spaghetti instead of water— well, we are not only using red wine. This is a good dish to add color and fun to a classic pasta dish. Any leftover red wine you have is the perfect condiment for your pasta water. Not only will the flavor of the dish itself improve, but also the color will pop, and the party is on! Adding red wine to a pasta dish in the boiling water is a classic way that we have in Italy to use leftover wine that has been sitting there for a little too long and is no longer good for drinking; that does not prevent us from using it to color and be playful with our pasta dishes. Everybody will be wowed! Enjoy!
