Thanks for joining us this week while we share ways to keep the kiddosβ hands active in the kitchen, exploring healthy foods and recipes. This week we will tackle zucchini fries! The channel is called βCooking with the Kiddosβ, but the recipes are yummy for all.

Recipe:
β’ ΒΌ cup all-purpose flour
β’ Β½ cup Panko
β’ 1 egg
For the seasoning:
β’ ΒΌ cup freshly grated Parmesan cheese
β’ Β½ teaspoon Italian seasoning
β’ A dash of salt and pepper to taste
β’ 2 zucchini quartered lengthwise, 3 times
β’ 1 tablespoons of parsley to spread over the final product
Preheat oven to 425 degrees. Cut zucchini into quarters, and then cut each section into quarters again⦠and again one more time (reference video for visual). Dip cut zucchini into ¼ cup of flour and massage flour into each zucchini bit. Crack 1 egg into a bowl and beat it. *sings Michael Jackson for a moment*. Add together all ingredients for the seasoning and mix. Then dip each floured zucchini bit into the egg mix, and then homogenously roll the bit into the seasoning mix and place on a greased baking sheet. Repeat until each zucchini fry has been dipped and rolled into the eggs and seasoning.
Place your baking sheet in the oven at 425 for 22 minutes. Feel free to flip the zucchini fries half-way through to ensure homogenous cooking.
Take out of the oven after 20-22 minutes, gently season with chopped parsley and/or salt and enjoy! Itadakimasu (Japanese for bon-apetite!)
