This recipe yields 4 calzone but the filling I’m mentioning below is for 2. You can use rest of the portions for regular pizzas or double the quantities of filling ingredients.

Ingredients:
For Dough:
βͺοΈPlain Flour 500gm
βͺοΈYeast 1 Sachet(7gm)
βͺοΈSalt To Taste
βͺοΈOil 2 Tablespoons
βͺοΈLukewarm Water 315 ml
πKnead everything for about 10 minutes and then cover and leave to rise in a warm place for 2-4 hours.
For Filling:
βͺοΈLamb Salami 200gm
βͺοΈSliced Mushrooms 150gm
βͺοΈFresh Basil Leaves 6-7
βͺοΈChopped Onion 1 (medium)
βͺοΈTomato Puree 4 Tablespoons
βͺοΈRed Chilli (mild) 1
βͺοΈOlive Oil 2 Tablespoons
βͺοΈSalt & Black Pepper To Taste
βͺοΈChopped Garlic 1 Tablespoon
βͺοΈMozerrala Cheese per requirement
βͺοΈRicotta/parmesan cheese or mascarpone.
(You can use creamcheese as substitute).
π Saute onion and cook rest of the ingredients in oil. There shouldn’t be any moisture in the filling.
π Cheese:
You need any of these π Ricotta, mascarpone, parmesan (if you could find halal or vegetarian) and mozerrala cheese. You can use cream cheese if you like.

Method:
βͺοΈKnead the dough with wet/oily hands for 5-7 minutes again.
βͺοΈLeave to rise again for 30 minutes. Meanwhile prepare the filling.
βͺοΈRoll out the pizza dough. Fill the half of it with salami filling, top it with cheese and fresh basil leaves.
βͺοΈClose (turnover) the other side like a semi-circle. Close carefully.
βͺοΈBrush the pizza with tomato puree, that’s how calzone is supposed to be.
βͺοΈBake it on 250Β°c (fan 230Β°c) for 12-14 minutes depends upon the oven.
