Let us know if you want us to make Tiramisu – the Italian way!!
Recipe:
Β½ cup of softened butter (we used vegan butter)
1 Β½ cups of sugar ( you can use brown sugar or coconut sugar too)
2 eggs (sub apple sauce to make it vegan)
1 cup of plain greek yogurt (can use vegan yogurt)
1 teaspoon of Vanilla (we used in powder form but you can use vanilla extract)
2 cups of all purpose flour ( we used NUTRIFREE FARINA MULTIUSO to make it gluten free, my sister used Bob’s Red Mill Gluten Free 1-to-1 Baking Flour)
1 teaspoon baking soda (We used baking powder)
ΒΌ teaspoon salt
1 cup mashed bananas (For us it was around 3 bananas medium sized)
Directions:
Preheat oven to 350 Farenheit (180 Celsius)
Use a 13 x 9 x 2-inch baking pan (33 x 23 x 5 cm) – We used a Pyrex pan
Butter the baking pan
In a large bowl blend the butter and sugar until fluffy
Add eggs, yogurt and vanilla and blend again
In a small bowl add flour, baking soda, and salt and mix together evenly.
Mix the dry ingredients into the wet ingredients and blend with spatula until smooth
Add in the bananas and stir carefully until fully blended
Pour mix into baking pan
Cook until golden brown ( we used a fork to confirm it was cooked in the middle)
Enjoy with fresh bananas on top or even strawberries!!
