Roasted Harvest Vegetable Blend
Ingredients
2 Sweet Potatoes, peeled and cubed
1 Red Onion (cut into large cubes)
1 White Onion (cut into large cubes)
3 Tri Color Carrots
1 Red Pepper (seeded and diced)
1 Orange Pepper (seeded and diced)
1 Yellow Pepper (seeded and diced)
1 Green Pepper (seeded and diced)
1 Zucchini (cubed)
1/4 cup Olive Oil
2 tbsp Balsamic Vinegar
2 tbsp Italian Seasoning
1 tbsp Salt
Directions
Preheat oven to 475 degrees. In a large bowl, combine the zucchini, peppers, carrots and sweet potatoes. Separate the onions into pieces and add them to the mixture along with olive oil, balsamic vinegar, Italian seasoning and salt. Toss with vegetables until they are coated. Spread evenly on a large roasting pan. Roast for 25 to 35 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are tender and slightly browned.
