Spaghetti aglio, olio e peperoncino is translates to “spaghetti with garlic and oil”. I made two types of this traditional dish which contains little more than these ingredients. The garlic infuses the oil with rich, nutty flavor, and salty, starchy spaghetti cooking water transforms it into a deeply flavourful sauce. Add perfect al dente pasta to the mix, and it’s absolute heaven.
