This video shows an easy side dish to make whether you are at home in your kitchen or out camping. An easy Italian Potato Salad that uses a minimum of ingredients.
Recipe
Place in large bowl:
4 Russet Potatoes cooked and sliced
• cook with skins on then peel when cool
• slice about ¼ inch thickness, too thin and the slices will fall apart
½ small onion thinly sliced
• Cut rings in half or smaller
• Use more or less onion to taste
½ can black olives sliced (optional)
1 part vinegar (approx. ¼ cup)
2 parts oil (approx. ½ cup)
Season to taste:
2-3 pinches of dried basil
1-2 pinches dried oregano
Salt and pepper
