In this video I show you how to make a very simple dish look fancy. Ingredients below;

Seared Scallops:
1/2 lb dry sea scallops
salt
pepper
1 tbsp avocado oil or other high smoke point oil
2 tbsp butter

Squid Ink Risotto
3 tbsp of extra virgin olive oil
1 onion, peeled and finely chopped
1 garlic clove, crushed and peeled
1 tsp squid ink, (optional)
120ml of dry white wine
80g of unsalted butter
360g of risotto rice
60ml of dry white wine
1.5l chicken stock, heated
Brick of parm cheese
