Hey family!!! Today I’m back with another What’s For Dinner video! We’re making Skillet Meat Lovers Pizza Casserole & Cheesy Hamburger Potato Casserole! Both dinners come in at under $3.00 per serving and less than $15 for each dinner for six people.

Skillet Meat Lovers Pizza Casserole

INGREDIENTS
1 Tablespoon avocado oil NOTE: I didn’t have this so I just skipped it.
1/2 Onion, diced
1 green bell pepper diced
1 pound Italian Sausage NOTE: I just used two pounds ground beef.
1 pound Ground beef
1 Jar Marinara
2 Cups Shredded Mozzarella Cheese
1/2 Cup Grated parmesan
30 slices Pepperoni
1/4 Cup sliced black olives (optional) NOTE: I didn’t have these.

INSTRUCTIONS
In a large skillet over medium heat, sauté your onions and green peppers in the avocado oil until translucent. (about 5 minutes )
Add in your sausage and ground beef, chopping and stirring until brown. Season with salt and black pepper to taste.
Drain the grease from the meat and discard.
Add in the Marinara Sauce, stirring to combine then flatten the top with a spatula.
Add both the cheeses to cover the top, followed by a solid layer of pepperoni.
Add the sliced olives (optional)
Place skillet in oven on high broil to brown the top.
Serve. Makes 8 servings

Homemade Marinara

Ingredients
1 15 oz can diced tomatoes
1 can tomato paste
1 15 oz can tomato sauce
salt and pepper to taste
1 garlic clove, minced
1 tablespoon olive oil
1/4 cup sugar
1 teaspoon dried oregano

Heat oil in skillet. Saute garlic about three minutes. Add in all other ingredients and bring to a simmer. You can taste it here to see if you want to add more sugar or more salt. Let simmer for 15 minutes.

Cheesy Hamburger Potato Casserole

NOTE: I switched out the fresh potatoes with the dried ones, so I lowered the cook time to 30 minutes.
Ingredients:
1.5 pounds ground beef
1 onion, finely diced
4 pounds potatoes, peeled
Salt and pepper
8 ounces cheddar cheese, shredded (about 2 cups)
1 10.75-oz can condensed Cheddar Cheese soup
1 12-oz can evaporated milk
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper

INSTRUCTIONS:
Spray a 13×9 baking dish with cooking spray and preheat oven to 350 degrees.
Add ground beef and onion to a large skillet, season with salt and pepper then cook until ground beef is cooked though and crumbled. Drain fat then set aside.
Cut potatoes into thin slices (less than 1/4 inch). Add one layer of potato slices to the bottom of the baking dish. Sprinkle potatoes with salt and pepper. Top potatoes with 1/4 of beef mixture. Top beef with 1/4 of shredded cheese. Repeat this process three more times.
Combine condensed cheddar soup, evaporated milk, milk, salt, garlic powder and pepper then whisk until smooth. Pour mixture over potato/beef/cheese layers. Cover dish with aluminum foil then bake at 350 degrees for one hour. Remove foil then continue baking for an additional 15 minutes or until potatoes are tender and dish is light golden brown and bubbly.
