Italian Sausage and Peppers is one of our favorite dishes! Originally a Mama Leone recipe. I hope you enjoy!!!

Recipe
1 Garlic clove, mashed
8 fresh parsley sprigs, leaves only
1 lb cabbage
2 lbs Italian sweet sausage or smoked sausage
1/4 cup olive oil
pinch of freshly ground black pepper
1/4 lb prosciutto or bacon
2 oz salt pork, diced
1 cup onions, peeled and diced
6 medium sized bell peppers, sliced
2 large ripe tomatoes, thinly sliced
1 tsp rosemary
Directions
Chop the garlic and parsley together. Splice or shred the cabbage and steam it with a little boiling water until just tender. Drain, and keep warm. Cut the sausage pieces. Combine olive oil and salt pork (bacon too if you are using bacon) in a sauce pan and heat. Add onion and brown slowly. Bake Sausage in oven at 350 for 20 minutes, steam cabbage until tender, keep warm. Add to the bacon and onions the bell peppers, tomatoes, rosemary, black pepper, and garlic and parsley. Cook for 10 minutes. Add in the cooked cabbage (and prosciutto if using instead of bacon), and bacon. Cook 10 minutes until flavors blend. Serve with a loaf of Italian bread toasted in the oven, an arugala salad, and a nice glass of a California red wine! Serves 4-6.
