Ragù is the best !

Ingredients:
500 gr. minced meat of beef
300 gr. minced meat of pork
2 carrots
1 onion
2 celery stalks
1 glass of red wine
750 ml. tomato sauce
3 cloves
3 grounds of pepper
4 bay leaves
2 small rosemary branches
salt q.s.
Extra virgin olive oil q.s.
1/2 tea spoon of sugar
doses for about 20 portions

Preparation:
Chop the onion, the carrots and the celery stalks in to small pieces and brown them with extra virgin olive oil for about 20 minutes.
Add the meats and cook until it is brown, trying to separate them with a spoon to obtain a finer texture adding more oil if needed and then add the wine and continue to cook for about 5 minutes
Now add the aromatic herbs, the spices, the tomato sauce, the sugar and adjust with the salt and continue to cook on low temperature ( …the sauce deve cantare as I told you : )) for not less then 5 hours stirring occasionally ( I usually cook it fro about 5 hours for the first day and other two hours the day after).
You can understand that the ragù is gonna be ready when the color of the sauce become darker.
