Sicilian Peasants lemon and Tarragon chicken.
Ingredients
Serves four.
4 Free range chicken breasts skin on. Or Thighs depends upon taste.
2 lemons
2 Onions
2 Sweet red peppers.
2 cloves of garlic
1 to 1.5 Glass’s of white wine.
Punet of cherry tomatoes
4 baby potato’s per person
Tarragon.
Olive oil
Black Pepper.
Method.
Place the chicken in a baking or open casserole dish cover with a generous glug of olive oil.
Halve the potatoes.
Quarter the onions
Quarter the peppers
Crush the garlic
Add the tarragon a generous sprinkle all over
Halve the lemons squeeze over the chicken and vegetables then place the lemons in with the dish to cook they are beautiful to eat when cooked.
Add the wine.
Black pepper and cook in the oven 180c for 60 to 90 mins covered with foil for 1 hr then remove the foil for the last segment of cooking or until cooked add the tomatoes 30mins before serving.
