Pasta dough recipe
350g yolk
4-5 eggs
500g semolina
500g tipo 00

Split in half
ad 7g of cracked pepper to one of the doughs

Salsa pomodoro
2 onions
2 cloves of garlic
2g picked thyme
Zest from 1 lemon
1 big red bell pepper
4g smoked paprika
2cans of tomato
7g tomato pure
50g butter
70g creme
Salt

‘Mortadella’ mix
500g fatty minced pork
1g nutmeg
1egg
100g prosciutto
50g parmigiano
40g flower
5g salt

To finish
Brown butter infused with thyme and garlic
Parmigiano with lemon thyme
