CHICKEN CACCIATORE
Prep & cook time – about an hour
These amounts serve 2-3

You will need:
Two boneless skinless chicken breasts
½ cup all-purpose flour
1 ½ cups thinly sliced onion rings
½ cup red bell pepper, cut in bite size pieces
2 cloves garlic, minced or crushed
1 cup grape tomatoes or cherry tomatoes, sliced in half
1 15-oz can plain tomato sauce
1 tsp salt
¼ tsp dried oregano
Olive oil
Pasta, noodles, or rice

Prep:
Prepare vegetables per ingredient list – slice onions, cut pepper and tomatoes, mince garlic.
Rinse chicken breasts and pat dry. Trim as needed. Cut chicken into strips or cubes as desired.

Cook:
Measure ½ cup flour into a gallon size plastic bag.
Put a large skillet on medium-high heat, and generously coat the bottom with oil.
Put several pieces of the chicken into the flour bag, hold closed and toss to coat the chicken. Remove chicken pieces into the skillet. Repeat this process til all the chicken is coated with flour and in the pan.
Brown chicken lightly on both sides (about 15 minutes), and then remove from pan.

Add a little more oil to pan as needed, and then add the onions, pepper, and garlic. Cook and stir over medium heat until vegetables are tender.
Stir in the can of tomato sauce, the salt and oregano, gently turning to coat all the vegetables.
Then add back the chicken, and top with the tomatoes, stirring again.

Cover tightly and simmer 30 minutes, stirring frequently.
Serve over pasta, egg noodles, or fluffy rice, and enjoy! This would also be great on a hoagie roll, as an open-faced sandwich.
