Manu Buffara one of the best examples of sustainable approach in Fine Dining. She uses organic ingredients from carefully selected suppliers and her own garden. Manu was born in Brazil with Italian and Lebanon origins. She is very young but has already a great background gained in restaurants such as Noma where she met Rene Redzepi whose approach to nature and food has changed her vision and future. Manu represents the new generation of Brazilian gastronomy under the leadership of Chef Alex Atala.
