My Nonni would be proud! She used to make stuffed cabbage special just for me. I haven’t had stuffed cabbage since she passed because her recipe was so good. But, being quarantined has given me the time to cook some recipes I’ve never tried before. So, I went looking for different receipts and took what I liked from them all and made my own version. They were awesome!
Tomato Sauce:
• 2 tablespoons olive oil
• 1 onion (diced)
• 2 cloves garlic (minced)
• 2 cups crushed tomatoes
• 2 cups (or so) of tomato sauce (I used Rao’s – but you can use whatever kind you like)
• 2 tablespoons tomato paste
• Salt and pepper to taste
• 2 tablespoons brown sugar
• 1 tablespoon red wine vinegar
• 1 tablespoon Worcestershire sauce
• 1 teaspoon dried Italian herbs
Cabbage Rolls:
• 1 pound ground beef
• 1 cup uncooked rice (I used Jasmine)
• 1 tablespoon onion powder
• 2 cloves garlic (minced)
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1 tablespoon Worcestershire sauce
• 1 teaspoon paprika
• 1 teaspoon dried Italian herbs
• 1/4 cup parsley (fresh is best – but dried is fine)
• 1 egg
• 1 head cabbage – (cut out core & dunk in boiling water for a couple of minutes)
