This is Italinan Sausage and pasta dish known as Penne Alla Norcina. I use Parmigiano-Reggiano for this and Mild Italian Sausage, but plain ground pork would work as well. Makes three servings.
Ingredients:
1 pound mild Italian sausage
3/4 teaspoon coarse salt
1/4 cup chopped onion
1 Tablespoon chopped rosemary or more
2 chopped garlic cloves
1/2 cup white wine (I used Pinot Grigio)
1 and 1/4 cups heavy cream or more
1/4 cup pasta cooking water
Parmigiana-Reggiano, around 3 ounces
7 to 8 ounces of penne pasta. (200 grams)

Brown your pork in skillet
Add your onion, rosemary and garlic, cook for two minutes.
Deglaze pan with 1/2 cup white wine
Add your heavy cream and cook for 3 or 4 minutes.
Add your al dente pasta and cook until pasta is done.
Add any pasta water if needed.
Top off with your parmesan and turn off the heat.

I did not cook my pasta quite enough and that required me to cook the pasta with the sausage for a bit too long, but it turned out great and the salt was perfect. Next time I think I will add more rosemary, say 1 and 1/2 Tablespoons.
