This recipe is one of my favorite go to recipes after a busy day. It doesn’t take much to whip up and in as little as 30 minutes, you have a very delicious gourmet meal on the table! I hope you are able to give this a shot. You won’t regret.
Ingredients:
1 12 oz package linguine
2 lb e-z peel shrimp
3 cups baby spinach
1 small bunch Italian parsley
1/4 teaspoon chilli flakes
3 tablespoons sun dried tomatoes in oil (optional)
4 tablespoons avocado oil + another 2 in water to cook linguine
1/2 teaspoon black pepper
salt to taste
Ps, unlike baking, I like to switch it up a lot when cooking. In this recipe I didn’t use lemon juice but I have done so several times and it comes out great. I dint’t miss the lemon in this, but feel free to add the juice of 1 lemon if you like. Happy cooking!
