Zucchini parmigiana
Summer is coming soon, I love it and all the fresh fruit and veggies it provides, zucchini is one of my favourite veggie, there’re so many ways to prepare them!, roasted, stuffed, fried, with pasta or rice….even baked!
Try this recipe “zucchini parmigiana” an easy, delicious and also healthy dish, it’s perfect even eaten cold ….. let’s find out the ingredients:
INGREDIENTS LIST: (for 6 persons)
8 big zucchini about 1,8kg (63,5oz) (4lb)
200g (7oz) (1 3/4 cups) grated parmigiano
400g (14,1oz) dried mozzarella cheese
120g breadcrumbs(4,2oz) (3/4cup)
Salt
Olive oil
Preheated ventilated oven 180C / 350F for 1 hour
