Today, I am going to show you how to make a classic Italian “secondo”: pollo in potacchio – the version with peppers. Braised chicken with peppers is made only with a few ingredients: chicken drumsticks, peppers, garlic, rosemary and olive oil. It is a very simple recipe. Easy peasy!
Warning: this is a dish for meat lovers – not for vegetarians.
INGREDIENTS
2 to 3 chicken drumsticks and/or chicken thighs per person
2 to 3 large peppers
2 cloves of garlic
3 table spoons of olive oil
1 twig of fresh rosemary (a few pinches of dried rosemary)
1/2 glass of white wine
PREPARATION
Remove the skin of the chicken drumsticks and/or chicken thighs.
Remove the stems of the peppers and slice them.
Pour 3 table spoons of olive oil in a large frying pan. When the oil is warm, place two crushed cloves of garlic in it and let them fry lightly for 2 minutes. Add the chicken drumsticks and/or chicken thighs and a half glass of white wine. Cover and let cook for 20 minutes. At this point, add the sliced peppers, a few pinches of salt, the rosemary and a glass of water. Cover and cook for at least 20 minutes. After 20 minutes, check the status of the chicken and cook it for longer, if needed.
Serve warm.
